Day 8 is a food technology startup developing plant-based protein ingredients for the food industry. Its technology extracts RUBISCO protein from discarded plant leaves, using agricultural biomass that would otherwise be treated as waste. The resulting protein is intended to serve as a functional and taste-neutral ingredient for plant-based food products and other food applications.
